Ingredients

  • 4 slices Whole grain bread
  • 4 tablespoons Low-fat pesto
  • 4 slices Part-skim mozzarella cheese
  • 1 medium, sliced Tomato
  • 1 cup Baby spinach
  • 1 spray Olive oil cooking spray

Directions

Step 1

Preheat a panini press or a skillet over medium heat.

Step 2

Spread 1 tablespoon of low-fat pesto on one side of each slice of whole grain bread.

Step 3

On two slices of bread, layer one slice of part-skim mozzarella cheese, followed by a few slices of tomato and a handful of baby spinach.

Step 4

Top with another slice of mozzarella cheese and close the sandwich with the remaining two slices of bread, pesto side down.

Step 5

Lightly spray the outside of each sandwich with olive oil cooking spray.

Step 6

Place the sandwich on the preheated panini press or skillet. If using a skillet, press down with a heavy spatula.

Step 7

Cook for about 2-3 minutes on each side, or until the bread is golden brown and the cheese is melted.

Remove from the heat, cut each panini in half, and serve warm.
