Ingredients

  • 4 medium Russet potatoes
  • 1 medium Onion
  • 1 medium Red bell pepper
  • 1 tablespoon Olive oil
  • 0.5 teaspoon Salt
  • 0.25 teaspoon Ground black pepper
  • 0.5 teaspoon Paprika
  • 0.5 teaspoon Garlic powder
  • 1 tablespoon Optional: chopped fresh parsley

Directions

Step 1

Scrub and peel the potatoes, then cut them into 1/2-inch cubes to ensure even cooking.

Step 2

Place the cubed potatoes in a large pot, cover with water, and bring to a boil over medium-high heat. Boil for about 5 minutes until partially tender, then drain well and set aside.

Step 3

While the potatoes are boiling, finely dice the onion and red bell pepper.

Step 4

In a large non-stick skillet, heat the olive oil over medium heat. Add the diced onion and bell pepper, cooking until they become soft and translucent, about 5 minutes.

Step 5

Increase the heat to medium-high and add the partially cooked potatoes to the skillet. Spread them in a single layer to ensure crispness.

Step 6

Sprinkle the salt, ground black pepper, paprika, and garlic powder over the potatoes, stirring occasionally to coat them evenly and prevent sticking.

Step 7

Cook without stirring for about 5-6 minutes until the bottom side of the potatoes is golden brown and crispy. Then carefully flip and cook for another 5-6 minutes until all sides are crispy.

Step 8

Taste for seasoning and adjust salt and pepper if necessary.

Step 9

Remove from heat and, if desired, garnish with chopped fresh parsley for an optional touch of freshness.

Step 10

Serve immediately hot and enjoy as a side or on their own.
