Ingredients

  • 2 pieces Whole grain burger buns
  • 2 pieces Large eggs
  • 1 cup Fresh baby spinach leaves
  • 1 small Tomato
  • 3 tablespoons Low-fat plain yogurt
  • 0.5 teaspoon Garlic powder
  • 0.5 teaspoon Salt
  • 0.25 teaspoon Black pepper
  • 1 spray Olive oil spray

Directions

Step 1

1. Begin by preparing the yogurt sauce. In a small bowl, mix the low-fat plain yogurt, garlic powder, half of the salt, and black pepper until well combined. Set aside.

Step 2

2. Slice the small tomato into thin slices and set aside.

Step 3

3. Heat a non-stick frying pan over medium heat and lightly spray with olive oil.

Step 4

4. Crack the eggs into the pan and reduce the heat to low. Sprinkle the remaining salt over the eggs. Cook until the whites are firm and the yolks are almost set, about 4 minutes.

Step 5

5. While the eggs are cooking, lightly toast the whole grain burger buns in a toaster or on a skillet until they are slightly crispy.

Step 6

6. Once the buns are toasted, spread a generous amount of the prepared yogurt sauce on the bottom half of each bun.

Step 7

7. Layer each bun with an equal portion of fresh baby spinach leaves.

Step 8

8. Place the cooked eggs on top of the spinach layer.

Step 9

9. Arrange the sliced tomatoes over the eggs.

Step 10

10. Top each burger with the other half of the bun and serve immediately.
