  • 12 oz Whole wheat penne pasta

  • 28 oz Canned crushed tomatoes
  • 2 tbsp Tomato paste
  • 1 tsp Dried oregano
  • 1 tsp Dried basil
  • 1 cup Low-sodium chicken broth
  • 0.5 tsp Salt
  • 0.25 tsp Black pepper
  • 0.25 cup Fresh parsley, chopped
  • 0.25 cup Grated Parmesan cheese

Directions

Step 1

Bring a large pot of water to boil over high heat. Add a pinch of salt and the whole wheat penne pasta. Cook according to package instructions, or until al dente. Drain well and set aside.

Step 2

In a large skillet over medium heat, warm 1 tablespoon of olive oil. Add the chopped onion and cook until softened and translucent, about 5 minutes.
