Ingredients

  • 250 grams whole wheat penne pasta
  • 1 cup non-fat Greek yogurt
  • 1 cup skim milk
  • 2 cups fresh spinach
  • 0.25 cup grated Parmesan cheese
  • 2 cloves minced garlic
  • 1 tablespoon extra virgin olive oil
  • 1 tablespoon cornstarch
  • 2 tablespoons cold water
  • 1 teaspoon salt
  • 0.5 teaspoon black pepper
  • 0.5 teaspoon dried oregano
  • 0.25 teaspoon red pepper flakes

Directions

Step 1

1. Bring a large pot of salted water to a boil over high heat. Add the penne pasta and cook until al dente, about 10 minutes, then drain and set aside.

Step 2

2. In a small bowl, mix the cornstarch with cold water to form a slurry and set aside.

Step 3

3. Heat the olive oil in a large non-stick skillet over medium heat. Add the minced garlic and sauté until fragrant, about 1 minute.

Step 4

4. Add the fresh spinach to the skillet and cook until it wilts, about 2-3 minutes.

Step 5

5. In the same skillet, pour in the skim milk and allow it to warm up, but do not boil.

Step 6

6. Stir in the cornstarch slurry and cook over medium heat, stirring continuously until the sauce thickens, about 2 minutes.

Step 7

7. Reduce the heat to low and whisk in the non-fat Greek yogurt until smooth.

Step 8

8. Add the grated Parmesan cheese, salt, black pepper, dried oregano, and red pepper flakes to the sauce. Stir well to combine.

Step 9

9. Add the cooked penne pasta to the creamy sauce, tossing well to coat the pasta evenly.

Step 10

10. Serve the pasta warm, garnished with additional Parmesan cheese if desired.
