Ingredients

  • 12 oz whole wheat penne pasta
  • 1 tbsp olive oil
  • 2 cloves garlic, minced
  • 1.5 cups low-fat milk
  • 4 oz low-fat cream cheese
  • 0.5 cup grated parmesan cheese
  • 0.5 cup chicken or vegetable broth
  • 2 tbsp fresh parsley, chopped
  • 0.5 tsp salt
  • 0.25 tsp black pepper

Directions

Step 1

Bring a large pot of water to a boil. Add a pinch of salt and the penne pasta. Cook according to the package instructions until al dente. Drain and set aside.

Step 2

In a large non-stick skillet over medium heat, add olive oil. Once hot, add the minced garlic and sauté for about 1 minute until fragrant.

Season the Alfredo sauce with salt and black pepper. Adjust seasoning to taste.

Step 6

Add the cooked penne pasta to the skillet and toss to coat the pasta evenly with the sauce.

Step 7

Sprinkle with chopped parsley before serving.
