Ingredients

  • 250 grams all-purpose flour
  • 1 teaspoon baking powder
  • 0.5 teaspoon salt
  • 2 tablespoons olive oil
  • 100 milliliters cold water
  • 200 grams ground chicken
  • 0.5 medium onion, finely chopped
  • 1 medium garlic clove, minced
  • 1 medium tomato, diced
  • 10 pieces green olives, sliced
  • 2 tablespoons parsley, chopped
  • 0.5 teaspoon black pepper
  • 1 egg, for egg wash

Directions

Step 1

In a large bowl, mix together the all-purpose flour, baking powder, and salt.

Step 2

Add the olive oil and cold water, then mix until the dough starts to come together.

Step 3

Transfer the dough onto a floured surface and knead it for about 5 minutes until smooth and elastic.

Step 4

Wrap the dough in plastic wrap and let it rest for at least 30 minutes.

Step 5

In a non-stick pan over medium heat, cook the ground chicken until browned.

Step 6

Add the chopped onion and minced garlic to the pan and sauté until the onion becomes translucent.

Step 7

Stir in the diced tomato, sliced green olives, chopped parsley, and black pepper. Cook for another 3-4 minutes, then remove from heat and let it cool.

Step 8

Preheat your oven to 200°C (390°F).

Step 9

Divide the rested dough into 8 equal pieces. Roll each piece into a thin circle on a floured surface.

Step 10

Place about 2 tablespoons of the cooled filling in the middle of each dough circle, fold the dough over the filling to create a half-moon shape, and press the edges to seal.

Step 11

Crimp the edges with a fork to ensure they're tightly sealed.

Step 12

In a small bowl, beat the egg with a tablespoon of water to make an egg wash.

Step 13

Brush the egg wash over the top of each pastel.

Step 14

Place the pastéis on a baking sheet lined with parchment paper.

Step 15

Bake in the preheated oven for 18-20 minutes, or until golden brown and crispy.

Step 16

Serve warm and enjoy your low-fat Brazilian pastéis!
