Ingredients

  • 12 oz Whole wheat penne pasta
  • 1 tbsp Olive oil
  • 3 large Garlic cloves, minced
  • 0.5 tsp Crushed red pepper flakes
  • 0.25 cup Vodka
  • 28 oz Canned crushed tomatoes
  • 1 cup Non-fat Greek yogurt
  • 0.5 cup Grated Parmesan cheese
  • 0.25 cup Fresh basil leaves, chiffonade
  • 0.5 tsp Salt
  • 0.25 tsp Ground black pepper

Directions

Step 1

Bring a large pot of salted water to a boil. Add the whole wheat penne pasta and cook according to package instructions until al dente. Drain and set aside.

Step 2

In a large skillet over medium heat, heat the olive oil. Add minced garlic and crushed red pepper flakes. Sauté for about 1 minute until fragrant, being careful not to burn the garlic.

Pour in the vodka and let it simmer for about 2-3 minutes, allowing the alcohol to cook off.

Add the canned crushed tomatoes to the skillet. Stir to combine and let the sauce simmer over medium-low heat for about 10 minutes, stirring occasionally.
