Ingredients

  • 8 ounces whole wheat pasta
  • 1 pound lean ground beef (93% lean)
  • 1 tablespoon olive oil
  • 1 medium onion, finely chopped
  • 3 garlic cloves, minced
  • 28 ounces canned crushed tomatoes
  • 2 tablespoons tomato paste
  • 1 teaspoon dried oregano
  • 1 teaspoon dried basil
  • 1 teaspoon salt
  • 0.5 teaspoon black pepper
  • 1 cup low-fat mozzarella cheese, shredded
  • 2 tablespoons fresh parsley, chopped

Directions

Step 1

Cook the whole wheat pasta according to package instructions in a large pot of salted boiling water. Drain and set aside.

Step 2

In a large skillet over medium heat, add the olive oil. Once hot, add the finely chopped onion and cook until translucent, about 3-4 minutes.

Add the minced garlic and cook for another 1 minute until fragrant.

Increase the heat to medium-high and add the lean ground beef to the skillet. Cook the beef until browned, breaking it up with a wooden spoon. Drain any excess fat if necessary.

Stir in the canned crushed tomatoes, tomato paste, oregano, basil, salt, and black pepper. Lower the heat to medium-low and allow the sauce to simmer for about 15 minutes, stirring occasionally.
