Ingredients

  • 8 ounces whole grain pasta
  • 2 cups low-fat milk
  • 2 tablespoons cornstarch
  • 1.5 cups reduced-fat sharp cheddar cheese
  • 0.25 cup Parmesan cheese
  • 0.5 teaspoon garlic powder
  • 0.125 teaspoon nutmeg
  • 0.5 teaspoon salt
  • 0.25 teaspoon black pepper
  • 2 tablespoons fresh parsley

Directions

Step 1

Bring a large pot of salted water to a boil. Add the whole grain pasta and cook according to package instructions or until al dente. Drain and set aside.

Step 2

In a medium saucepan, whisk together the low-fat milk and cornstarch until smooth.

Step 3

Place the saucepan over medium heat and cook the milk mixture, stirring continuously, until it begins to thicken, about 5-7 minutes.

Step 4

Once thickened, reduce the heat to low and stir in the reduced-fat sharp cheddar cheese and Parmesan cheese. Continue stirring until the cheese is fully melted and the sauce is smooth.

Step 5

Add the garlic powder, nutmeg, salt, and black pepper to the cheese sauce, stirring well to incorporate all the flavors.

Step 6

Add the cooked pasta to the cheese sauce and toss until the pasta is evenly coated with the sauce.

Step 7

Serve the pasta immediately, garnished with freshly chopped parsley for a touch of color and freshness.
