Ingredients

  • 8 ounces Whole wheat pasta
  • 8 ounces Lean ground beef (95% lean)
  • 1 medium Onion, chopped
  • 3 cloves Garlic, minced
  • 1 medium Red bell pepper, chopped
  • 1 medium Carrot, diced
  • 1 medium Zucchini, sliced
  • 14.5 ounces Canned diced tomatoes (no salt added)
  • 2 tablespoons Tomato paste
  • 1 teaspoon Dried oregano
  • 1 teaspoon Dried basil
  • 0.5 teaspoon Salt
  • 0.25 teaspoon Black pepper
  • 1 tablespoon Olive oil
  • 2 tablespoons Fresh parsley, chopped

Directions

Step 1

Bring a large pot of salted water to a boil, add the whole wheat pasta and cook according to package instructions until al dente. Drain and set aside.

In a large skillet over medium heat, add olive oil. Once hot, add the chopped onion and garlic, sautéing for about 3-4 minutes until the onion is translucent.
