  • 4 pieces Whole wheat tortillas
  • 2 pieces Boneless, skinless chicken breast
  • 1 tablespoon Olive oil
  • 1 medium Red bell pepper, thinly sliced
  • 1 medium Yellow bell pepper, thinly sliced
  • 1 medium Green bell pepper, thinly sliced
  • 1 small Red onion, thinly sliced
  • 8 pieces Lettuce leaves
  • 1 cup Greek yogurt, low-fat
  • 1 teaspoon Paprika
  • 0.5 teaspoon Garlic powder
  • 0.5 teaspoon Salt
  • 0.25 teaspoon Black pepper
  • 2 tablespoons Lemon juice

Directions

Step 1

Begin by preparing the chicken. Place the chicken breasts between two sheets of plastic wrap and use a meat mallet to flatten them to an even thickness for quicker cooking.

Step 2

Heat the olive oil in a large nonstick skillet over medium heat. Add the chicken breasts and cook for about 6-7 minutes on each side, or until cooked through and golden brown. Remove from the skillet and set aside to rest for a few minutes.
