Ingredients

  • 2 slices Whole-grain bread
  • 30 grams Low-fat mozzarella cheese
  • 1 cup Fresh spinach
  • 1 small (sliced) Tomato
  • 2 tablespoons Roasted red peppers
  • 1 teaspoon Low-fat mayonnaise
  • 1 teaspoon Dijon mustard
  • 1 spritz Olive oil spray

Directions

Step 1

Preheat a panini press or a non-stick grill pan over medium heat.

Step 2

In a small bowl, mix the low-fat mayonnaise and Dijon mustard together to create a light spread.

Step 3

Spread the mixture evenly on one side of each slice of whole-grain bread.

Step 4

Layer the fresh spinach, tomato slices, roasted red peppers, and low-fat mozzarella cheese onto one slice of bread with the spread facing up.

Step 5

Place the second slice of bread on top, with the spread facing down toward the fillings.

Step 6

Lightly spray the outside of the bread with a spritz of olive oil spray to help crisp up the bread during cooking.

Place the sandwich on the preheated panini press (or grill pan). If using a grill pan, place a heavy skillet or pan on top of the sandwich to press it down.
