Ingredients

  • 250 grams Orecchiette pasta
  • 1 tablespoon Olive oil
  • 2 units Garlic cloves, minced
  • 400 grams Cherry tomatoes, halved
  • 150 grams Tomato purée
  • 15 grams Fresh basil leaves, chopped
  • 0.5 teaspoon Salt
  • 0.25 teaspoon Black pepper
  • 0.25 teaspoon Red pepper flakes
  • 30 grams Parmesan cheese, grated (optional)

Directions

Step 1

Bring a large pot of salted water to a boil over high heat. Once boiling, add the orecchiette pasta and cook according to the package instructions, usually about 10-12 minutes, until al dente. Drain and set aside.

Step 2

While the pasta is cooking, heat the olive oil in a large skillet over medium heat.

Step 3

Add the minced garlic to the skillet and sauté for about 1 minute, until fragrant but not browned.

Step 4

Add the halved cherry tomatoes to the skillet and stir. Cook for about 5-7 minutes, stirring occasionally, until the tomatoes have softened and released their juices.

Step 5

Stir in the tomato purée, salt, black pepper, and red pepper flakes. Bring the sauce to a gentle simmer and let cook for another 5 minutes, allowing the flavors to meld.

Step 6

Remove the skillet from heat and stir in the chopped fresh basil.

Step 7

Add the cooked orecchiette pasta to the skillet and toss well to coat the pasta evenly with the tomato sauce.

Step 8

Serve the pasta hot, with a sprinkle of grated Parmesan cheese on top if desired, for an extra touch of flavor.
