  • 1.25 cups Water
  • 2 tablespoons Rice vinegar

  • 0.5 teaspoon Salt
  • 2 sheets Nori sheets
  • 0.5 Cucumber
  • 1 Carrot
  • 2 tablespoons Low-fat cream cheese
  • 1 Orange
  • 2 tablespoons Low-sodium soy sauce

Directions

Step 1

Rinse the sushi rice under cold water until the water runs clear. Combine with 1.25 cups water in a rice cooker or saucepan. Cook according to the rice cooker instructions or bring to a boil in the saucepan, then reduce the heat to low, cover, and simmer for 15 minutes. Remove from heat and let it sit, covered, for an additional 10 minutes.

While the rice is cooking, mix rice vinegar, sugar, and salt in a small bowl until dissolved.

Transfer the cooked rice to a large bowl, gently fold in the vinegar mixture with a spatula, and let it cool to room temperature.
