Ingredients

  • 3 pieces Large onions
  • 2 pieces Tomato
  • 1 inch Ginger
  • 3 pieces Garlic cloves
  • 1 teaspoon Red chili powder
  • 1 teaspoon Coriander powder
  • 1 teaspoon Mustard seeds
  • 1 teaspoon Cumin seeds
  • 1 teaspoon Salt
  • 1 tablespoon Tamarind paste
  • 1 cup Water
  • 1 tablespoon Oil (preferably olive or canola)
  • 2 tablespoons Fresh cilantro

Directions

Step 1

Peel and thinly slice the onions and set aside.

Step 2

Chop the tomatoes into small pieces and set aside.

Step 3

Peel and roughly chop the ginger and garlic.

Step 4

Heat the oil in a pan over medium heat.

Step 5

Add the mustard seeds and let them splutter.

Step 6

Add the cumin seeds and sauté for a few seconds until aromatic.

Step 7

Add the sliced onions to the pan and sauté until they become translucent, about 5 to 6 minutes.

Step 8

Add the chopped ginger and garlic, and continue to sauté for another 2 minutes.

Step 9

Mix in the chopped tomatoes, red chili powder, coriander powder, and salt. Cook for 5 minutes until the tomatoes are soft and mushy.

Add the tamarind paste and water to the mixture. Stir well and allow the chutney to simmer for about 10 minutes until it thickens.

Adjust the seasoning to taste and then remove the pan from heat.
