Ingredients

  • 4 medium onions
  • 0.5 cup besan (chickpea flour)
  • 2 teaspoons oil
  • 0.5 teaspoon cumin seeds
  • 0.5 teaspoon mustard seeds
  • 0.5 teaspoon turmeric powder
  • 0.5 teaspoon red chili powder
  • 1 teaspoon coriander powder
  • 1 teaspoon salt
  • 2 cups water
  • 2 tablespoons fresh coriander leaves

Directions

Step 1

Peel the onions and slice them thinly.

Step 2

In a bowl, add besan and gradually mix in the water to make a smooth batter without any lumps. Set aside.

Step 3

Heat 2 teaspoons of oil in a non-stick pan over medium heat.

Step 4

Add cumin seeds and mustard seeds to the hot oil and let them sizzle for a few seconds until aromatic.

Step 5

Add the sliced onions to the pan and sauté for about 5-7 minutes until they become soft and translucent.

Step 6

Stir in turmeric powder, red chili powder, coriander powder, and salt, and mix well with the onions.

Step 7

Pour the besan batter into the pan, stirring continuously to avoid lumps forming.

Step 8

Lower the heat to simmer and cook the mixture for about 15 minutes, stirring occasionally, until the besan is cooked and the curry thickens.

Step 9

Garnish the curry with freshly chopped coriander leaves and serve warm with steamed rice or flatbread of choice.
