Ingredients

  • 1 cup Gram flour (Besan)
  • 0.5 cup Rice flour
  • 0.5 teaspoon Asafoetida (Hing)
  • 0.25 teaspoon Turmeric powder
  • 0.5 teaspoon Red chili powder
  • 1 teaspoon Salt
  • 2 tablespoons Low-fat butter
  • 0.75 cup Water
  • 1 teaspoon Oil (for greasing)

Directions

Step 1

In a large mixing bowl, combine the gram flour and rice flour. Add the asafoetida, turmeric powder, red chili powder, and salt. Mix thoroughly.

Step 2

Melt the low-fat butter until just liquefied and add it to the dry ingredients. Mix together until the mixture resembles breadcrumbs.

Step 3

Gradually add water to the mixture, incorporating it slowly. Knead into a smooth and pliable dough. The dough should not be too stiff or too sticky.

Step 4

Prepare a clean surface and lightly grease it with oil. Transfer the dough to this surface.

Step 5

Divide the dough into two equal portions to make it easier to handle. Roll each portion into a thick log shape.

Step 6

Fill a chakli maker fitted with a fine holed plate with one portion of the dough. Ensure there are no air gaps.

Step 7

Line a baking tray with parchment paper and lightly grease it with oil. Preheat the oven to 350°F (175°C).

Step 8

Pipe the dough onto the parchment paper in a circular motion to form spirals, leaving some space between them.

Step 9

Once the tray is filled, place it in the preheated oven and bake for 15-20 minutes or until the omapodi turns golden and crisp. Turn the tray halfway through for even baking.

Step 10

Allow the omapodi to cool on the tray. Once cooled, they can be stored in an airtight container.

Step 11

Serve the low-fat omapodi as a crunchy snack by itself or as an accompaniment to tea or coffee.
