Ingredients

  • 2 pieces Boneless, skinless chicken breasts
  • 0.5 teaspoon Salt
  • 0.25 teaspoon Black pepper
  • 2 teaspoons Olive oil
  • 12 ounces Whole wheat fettuccine
  • 1 cup Unsalted chicken broth
  • 0.5 cup Fat-free half-and-half
  • 2 tablespoons Cornstarch
  • 1 teaspoon Garlic powder
  • 0.5 cup Grated Parmesan cheese
  • 2 tablespoons Chopped fresh parsley

Directions

Step 1

Season both sides of the chicken breasts with salt and black pepper.

Step 2

In a non-stick skillet, heat 1 teaspoon of olive oil over medium-high heat. Add the chicken breasts and cook for 5-6 minutes on each side until golden and cooked through. Remove from the skillet and set aside on a cutting board to rest.
