Ingredients

  • 2 cups Whole wheat flour
  • 1 cup All-purpose flour
  • 1 cup Warm water
  • 1 packet Active dry yeast
  • 1 teaspoon Sugar
  • 1 teaspoon Salt
  • 0.5 cup Black olives, pitted and roughly chopped
  • 1 clove Garlic, minced
  • 2 tablespoons Extra virgin olive oil
  • 1 teaspoon Dried oregano

Directions

Step 1

In a small bowl, combine warm water, sugar, and yeast. Let it sit for about 5-10 minutes until it becomes frothy.

Step 2

In a large mixing bowl, mix together the whole wheat flour, all-purpose flour, and salt.

Step 3

Make a well in the center of the dry mixture and pour in the yeast mixture. Add olive oil and minced garlic.

Step 4

Stir until the dough begins to come together, then add the chopped olives and dried oregano.

Step 5

Turn the dough out onto a lightly floured surface and knead for about 8-10 minutes until the dough is smooth and elastic.

Step 6

Place the dough in a lightly oiled bowl, cover it with a damp cloth, and let it rise in a warm place for about 1 hour or until it has doubled in size.

Step 7

Preheat the oven to 400°F (200°C).

Step 8

Punch down the dough and shape it into a round or oval loaf. Place it on a baking sheet lined with parchment paper.

Step 9

Let the loaf rise again for about 20 minutes.

Step 10

Bake in the preheated oven for 25-30 minutes, or until the bread sounds hollow when tapped on the bottom.

Step 11

Let it cool on a wire rack before slicing and serving.
