Ingredients

  • 2 pieces Medium potatoes
  • 1 large Cucumber
  • 5 pieces Radishes
  • 200 grams Cooked chicken breast
  • 2 medium Eggs
  • 3 stalks Green onion
  • 2 tablespoons Fresh dill
  • 1 liter Low-fat kefir
  • 250 milliliters Sparkling water
  • 2 tablespoons Lemon juice
  • 1 teaspoon Salt
  • 0.5 teaspoon Black pepper

Directions

Step 1

In a medium-sized pot, boil the potatoes until tender, about 15 minutes. Drain and let them cool.

Step 2

While the potatoes are boiling, hard boil the eggs in a separate pot for about 10 minutes. Peel and let them cool.

Step 3

Dice the cooled potatoes, eggs, cucumber, and cooked chicken breast into small cubes.

Step 4

Thinly slice the radishes and chop the green onions and dill finely.

Step 5

In a large bowl, combine the diced potatoes, eggs, cucumber, chicken, radishes, green onions, and dill.

Step 6

In a separate bowl, whisk together the low-fat kefir, sparkling water, lemon juice, salt, and black pepper until well blended.

Pour the kefir mixture over the diced ingredients and stir gently until everything is well combined.
