Ingredients

  • 200 grams All-purpose flour
  • 1 teaspoon Baking powder
  • 0.5 teaspoon Salt
  • 50 grams Sugar
  • 300 milliliters Low-fat milk
  • 1 large Egg
  • 1 teaspoon Vanilla extract
  • 200 grams Red bean paste (anko)
  • 0 Non-stick cooking spray

Directions

Step 1

In a large bowl, combine the all-purpose flour, baking powder, salt, and sugar. Mix well to ensure all the ingredients are evenly distributed.

Step 2

In a separate bowl, beat the egg. Add the low-fat milk and vanilla extract, then mix well.

Step 3

Pour the wet ingredients into the dry ingredients, and stir until you achieve a smooth batter. Be careful not to overmix, as this can make the batter tough.

Step 4

Prepare a muffin or obanyaki pan by heating it over medium heat and lightly coating it with non-stick cooking spray.

Step 5

Fill each cavity of the pan halfway with the batter, then add a tablespoon of red bean paste in the center of each. Cover the red bean paste with more batter until each cavity is nearly full.

Step 6

Cook the Obanyaki for about 2-3 minutes on the first side, or until bubbles begin to appear on the surface and the edges start to set.

Step 7

Carefully flip each Obanyaki with a spatula and cook for another 2-3 minutes on the other side, or until golden brown and cooked through.

Step 8

Transfer the cooked Obanyaki to a plate and repeat the process with the remaining batter.

Step 9

Serve warm and enjoy your low-fat Obanyaki, either on their own or with a light dusting of powdered sugar.
