Ingredients

  • 300 grams All-purpose flour
  • 8 grams Active dry yeast
  • 150 ml Skim milk
  • 50 grams Sugar
  • 100 grams Unsweetened applesauce
  • 1 tsp Salt
  • 100 grams Ground almonds
  • 50 ml Skim milk
  • 50 grams Honey
  • 1 tsp Cinnamon

Directions

Step 1

Warm the skim milk (150 ml) slightly to about 37 degrees Celsius (body temperature). Add the active dry yeast and 1 tablespoon of the sugar. Stir to dissolve and let sit for about 5 minutes until it foams.

Step 2

In a large bowl, combine the all-purpose flour, remaining sugar, and salt. Add the unsweetened applesauce and foamed yeast mixture. Knead the dough until it is smooth and elastic, for about 8-10 minutes.

Step 3

Cover the dough with a damp cloth and let it rise in a warm place for about 1 hour, or until it has doubled in size.

Step 4

While the dough is rising, prepare the filling. In a small bowl, mix the ground almonds, skim milk (50 ml), honey, and cinnamon until well combined.

Step 5

Once the dough has risen, punch it down and roll it out on a lightly floured surface into a rectangle, approximately 30 cm by 40 cm.

Spread the almond filling evenly over the rolled out dough.

Starting from the long side, gently roll the dough up into a log. Slice the log into 12 equal pieces.

Place the pieces cut side up on a baking sheet lined with parchment paper.

Cover the rolls with a cloth and let them rise again for about 15 minutes.

Preheat the oven to 180 degrees Celsius (350 degrees Fahrenheit).

Remove from the oven and let cool on a wire rack.
