Ingredients

  • 1 cup rolled oats
  • 0.25 cup ground flaxseed
  • 0.25 cup honey or maple syrup
  • 0.5 cup natural peanut butter or almond butter
  • 1 teaspoon vanilla extract
  • 0.25 cup mini chocolate chips
  • 0.25 cup chopped nuts (optional)
  • 0.25 cup shredded coconut (optional)

Directions

Step 1

In a large mixing bowl, combine 1 cup of rolled oats and 0.25 cup of ground flaxseed. Mix well.

Step 2

Add 0.25 cup of honey or maple syrup, and 0.5 cup of natural peanut butter or almond butter to the oats and flaxseed. Mix until well combined.

Step 3

Stir in 1 teaspoon of vanilla extract and 0.25 cup of mini chocolate chips. If using, also add 0.25 cup of chopped nuts and 0.25 cup of shredded coconut.

Step 4

Once everything is well incorporated, cover the bowl and place it in the refrigerator for 20-30 minutes. This will make the mixture easier to handle.

Step 5

After chilling, remove the bowl from the refrigerator. Using your hands, shape the mixture into small 1-inch balls. If the mixture is sticky, dampen your hands with a bit of water.

Step 6
