Ingredients

  • 500 grams lean beef (preferably shank or stew meat)
  • 2 medium onions, finely sliced
  • 1 tablespoon ginger paste
  • 1 tablespoon garlic paste
  • 3 tablespoons whole wheat flour
  • 6 cups water
  • 1 cup low-fat yogurt
  • 3 tablespoons Nihari masala
  • 1.5 teaspoons salt
  • 0.5 teaspoon turmeric powder
  • 2 tablespoons vegetable oil
  • 2 tablespoons coriander leaves, chopped
  • 2 green chilies, sliced
  • 1 lemon lemon wedges

Directions

Step 1

Heat 2 tablespoons of vegetable oil in a heavy-bottomed pot over medium heat.

Step 2

Add the sliced onions and sauté until they turn golden brown.

Step 3

Add ginger and garlic pastes, stirring for a couple of minutes until the raw aroma disappears.

Step 4

Add the beef chunks to the pot and sear them until they are browned on all sides.

Step 5

Combine 3 tablespoons Nihari masala, 1.5 teaspoons salt, and 0.5 teaspoon turmeric powder with the beef and mix well.

Step 6

Whisk 1 cup of low-fat yogurt until smooth. Gradually add it to the pot, stirring continuously to prevent curdling.

Step 7

Pour 6 cups of water into the pot, stirring the mixture well. Bring it to a boil.

Once it starts boiling, reduce the heat to a simmer, cover the pot, and let it cook for about 2.5 to 3 hours, or until the beef is tender.

In a small bowl, mix 3 tablespoons of whole wheat flour with enough water to form a smooth paste.
