Heat 2 tablespoons of vegetable oil in a heavy-bottomed pot over medium heat.
Add the sliced onions and sauté until they turn golden brown.
Add ginger and garlic pastes, stirring for a couple of minutes until the raw aroma disappears.
Add the beef chunks to the pot and sear them until they are browned on all sides.
Combine 3 tablespoons Nihari masala, 1.5 teaspoons salt, and 0.5 teaspoon turmeric powder with the beef and mix well.
Whisk 1 cup of low-fat yogurt until smooth. Gradually add it to the pot, stirring continuously to prevent curdling.
Pour 6 cups of water into the pot, stirring the mixture well. Bring it to a boil.
Once it starts boiling, reduce the heat to a simmer, cover the pot, and let it cook for about 2.5 to 3 hours, or until the beef is tender.
In a small bowl, mix 3 tablespoons of whole wheat flour with enough water to form a smooth paste.
Gradually add this paste to the simmering Nihari while stirring continuously to thicken the gravy. Let it simmer for another 10–15 minutes until the flour is cooked and the gravy reaches a thickened consistency.
Garnish with chopped coriander leaves and green chilies.
Serve hot with lemon wedges on the side, allowing diners to adjust the tartness to their preference.
