  • 1 whole Jalapeño, thinly sliced
  • 2 tablespoons Fresh cilantro, chopped
  • 0.5 cup Cherry tomatoes, diced
  • 2 whole Scallions, sliced

Directions

Step 1

Preheat your oven to 425°F (220°C) and line a baking sheet with parchment paper.

Cut the russet potatoes into thin wedges, approximately 1/2 inch thick.
