  • 500 grams white fish fillets
  • 1 whole lime
  • 3 whole garlic cloves
  • 1 teaspoon salt
  • 0.5 teaspoon black pepper
  • 1 medium yellow onion
  • 1 medium red bell pepper
  • 1 medium green bell pepper
  • 2 cups low-sodium vegetable broth
  • 0.5 cup coconut milk
  • 2 large tomatoes
  • 1 teaspoon cumin
  • 1 teaspoon paprika
  • 0.25 cup fresh cilantro
  • 1 second olive oil spray

Directions

Step 1

Rinse and pat dry the fish fillets. Cut them into roughly 1-2 inch cubes.

Step 2

In a small bowl, combine juice of 1 lime, minced garlic cloves, salt, and black pepper. Marinate the fish cubes in this mixture for at least 15 minutes in the refrigerator.

While the fish is marinating, slice the onion, red bell pepper, and green bell pepper into thin strips.

Chop the tomatoes and set them aside.
