  • 1 teaspoon Salt
  • 750 milliliters Warm water
  • 1 as needed Non-stick cooking spray

Directions

Step 1

Begin by washing the black-eyed peas to remove any debris. Place them in a large bowl, cover with water, and soak for at least 4 hours or overnight.

Step 2

After soaking, drain the peas and rub them between your fingers to peel off the skins. Rinse thoroughly to remove all traces of the skins.

In a blender, combine the peeled peas, red bell pepper, tomato, onion, scotch bonnet pepper, and warm water. Blend until you achieve a smooth batter.
