Ingredients

  • 400 g Black-eyed peas
  • 1 large Red bell pepper
  • 1 medium Tomato
  • 1 medium Onion
  • 1 small Scotch bonnet pepper
  • 1 large Egg
  • 250 ml Low-sodium vegetable broth
  • 50 ml Water
  • 1 tsp Thyme
  • 1 tsp Cumin powder
  • 1 tsp Salt
  • 0.5 tsp Black pepper

Directions

Step 1

Start by washing the black-eyed peas. Remove the skins by soaking the beans in water for about 20 minutes. Rub them between your hands and the skins will float to the top. Change the water a few times until most skins are removed.

Step 2

Drain the beans and place them in a powerful blender. Add the red bell pepper, tomato, onion, and scotch bonnet.

Blend the mixture until smooth. You may need to add a bit of water (just enough to blend smoothly).

Transfer the blended mixture into a large mixing bowl. Crack the egg into the mixture and blend well.

Add the low-sodium vegetable broth, water, thyme, cumin, salt, and black pepper to the mixture. Stir everything together until well incorporated.

Divide the mixture into individual heatproof containers or aluminum foil cups. Do not fill to the brim to allow room for expansion.
