Ingredients

  • 200 grams glutinous rice flour
  • 50 grams granulated sugar
  • 20 grams cornstarch
  • 250 ml non-fat milk
  • 150 ml water
  • 5 ml vanilla extract
  • 30 grams potato starch (for dusting)

Directions

Step 1

In a medium mixing bowl, whisk together the glutinous rice flour, granulated sugar, and cornstarch until well combined.

Step 2

Gradually stir in the non-fat milk and water, mixing until the batter is smooth and free of lumps.

Step 3

Add the vanilla extract to the mixture and stir until incorporated.

Step 4

Pour the batter into a microwave-safe dish or bowl. Cover the dish with microwave-safe plastic wrap or a lid with a small vent opening.

Step 5

Microwave the mixture on high for 2 minutes.

Step 6

Remove from the microwave and stir the mixture well. It might still be a bit watery at this stage, which is normal.

Step 7

Place it back in the microwave and heat in 1-minute intervals, stirring after each, until the mixture becomes translucent and sticky, about 3-5 minutes in total (dependent on microwave strength).

Step 8

While still sticky, transfer the mochi onto a clean surface dusted with potato starch to prevent sticking.

Step 9

Dust your hands with potato starch and knead the mochi gently, adding more potato starch as needed until it is manageable.

Step 10

Divide the mochi into small bite-sized pieces, approximately 24, shaping them into balls or cubes with your lightly starched hands.

Step 11

Dust with additional potato starch if needed and let them cool to room temperature before serving.
