  • 500 grams Mloukhiye leaves (fresh or frozen)
  • 500 grams Boneless, skinless chicken breast
  • 1 large Onion, finely chopped
  • 4 cloves Garlic, minced
  • 800 milliliters Low-sodium chicken broth
  • 50 milliliters Lemon juice
  • 1 tablespoon Olive oil
  • 1 teaspoon Ground coriander
  • 1 teaspoon Ground cumin
  • 0.5 teaspoon Black pepper
  • 0.5 teaspoon Salt
  • 200 grams Basmati rice
  • 400 milliliters Water

Directions

Step 1

Rinse the Basmati rice under cold water until the water runs clear. Soak in 400 milliliters of water for 20 minutes, then drain.

Step 2

In a large pot, heat 1 tablespoon of olive oil over medium heat. Add the chopped onion and minced garlic and sauté until the onion becomes translucent.

Step 3

Add the boneless chicken breast to the pot, cooking until the chicken is lightly browned on all sides.

Step 4

Stir in the ground coriander, ground cumin, salt, and black pepper. Cook for another minute until the spices are fragrant.

Step 5

Pour 800 milliliters of low-sodium chicken broth into the pot and bring to a gentle boil. Reduce the heat and simmer for 20 minutes until the chicken is cooked through.

Remove the chicken from the broth, shred it using two forks, and return it to the pot.

Prepare the Mloukhiye leaves by washing them thoroughly. If using frozen leaves, simply thaw them as per package instructions.

Once the Mloukhiye is done, stir in 50 milliliters of lemon juice to add brightness and a touch of acidity.
