Ingredients

  • 8 pieces Whole wheat mini tortillas
  • 120 grams Fat-free Greek yogurt
  • 2 teaspoons Dijon mustard
  • 1 tablespoon Fresh lemon juice
  • 1 teaspoon Honey
  • 0.5 teaspoon Garlic powder
  • 0.5 teaspoon Salt
  • 0.25 teaspoon Black pepper
  • 1 medium Red bell pepper, finely diced
  • 1 medium Cucumber, finely diced
  • 1 medium Carrot, grated
  • 60 grams Fresh spinach leaves
  • 2 tablespoons Fresh cilantro, chopped

Directions

Step 1

In a small bowl, combine the fat-free Greek yogurt, Dijon mustard, fresh lemon juice, honey, garlic powder, salt, and black pepper. Stir well until all ingredients are fully incorporated to make the low-fat dressing.

Step 2

Prepare the vegetables by finely dicing the red bell pepper and cucumber and grating the carrot.
