Ingredients

  • 4 pieces Whole wheat English muffins
  • 1 cup Low-fat tomato sauce
  • 1 cup Part-skim mozzarella cheese, shredded
  • 8 leaves Fresh basil leaves
  • 1 cup Cherry tomatoes, sliced
  • 0.5 cup Red onion, thinly sliced
  • 1 cup Spinach leaves, fresh
  • 1 teaspoon Oregano
  • 0.5 teaspoon Salt
  • 0.25 teaspoon Black pepper

Directions

Step 1

Preheat your oven to 400°F (200°C).

Step 2

Slice the whole wheat English muffins in half and place them on a baking sheet, cut side up.

Step 3

Spread approximately 2 tablespoons of low-fat tomato sauce on each half of the English muffins.

Step 4

Sprinkle an even layer of shredded part-skim mozzarella cheese over the sauce on each muffin half.
