Ingredients

  • 8 pieces Mini croissants
  • 7 ounces Canned tuna in water, drained
  • 0.5 cup Low-fat Greek yogurt
  • 2 teaspoons Dijon mustard
  • 1 stalk Celery stalk, finely chopped
  • 1 piece Green onion, finely chopped
  • 1 tablespoon Fresh dill, chopped
  • 1 tablespoon Lemon juice
  • 0.5 teaspoon Salt
  • 0.25 teaspoon Black pepper
  • 1 piece Tomato, thinly sliced
  • 4 leaves Lettuce leaves

Directions

Step 1

Start by preparing the tuna salad. In a medium-sized bowl, combine the drained canned tuna, low-fat Greek yogurt, Dijon mustard, chopped celery, green onion, dill, lemon juice, salt, and black pepper.

Step 2

Mix all ingredients together until the tuna is well coated and the mixture is creamy.

Step 3

Taste and adjust the seasoning if necessary, adding more salt, pepper, or lemon juice as desired.

Step 4

Slice each mini croissant in half horizontally. To keep them low fat, avoid using butter or spreads.

Step 5

On the bottom half of each croissant, place a small piece of lettuce followed by a thin slice of tomato.

Step 6

Add a generous spoonful of the tuna mixture on top of the tomato.

Step 7

Place the top half of the croissant over the filling to complete the sandwich.

Step 8

Repeat the assembly process for each croissant.

Step 9

Serve the sandwiches immediately, or cover them and refrigerate for up to 4 hours before serving.
