Ingredients

  • 200 grams Mee Pok noodles
  • 150 grams Lean ground chicken
  • 100 grams Bean sprouts
  • 100 grams Fresh spinach leaves
  • 1 tablespoon Fish sauce
  • 1 tablespoon Low-sodium soy sauce
  • 2 cloves Garlic
  • 2 small Shallots
  • 1 teaspoon Chili paste
  • 0.5 teaspoon White pepper
  • 1 teaspoon Canola oil
  • 5 grams Cilantro leaves
  • 0.5 whole Lime
  • 1 liter Water

Directions

Step 1

Begin by bringing 1 liter of water to a boil in a large pot.

Step 2

Add the Mee Pok noodles to the boiling water and cook for 2-3 minutes until just tender, stirring occasionally. Drain and rinse the noodles under cold water to stop the cooking process. Set aside.

Step 3

In a large non-stick skillet, heat 1 teaspoon of canola oil over medium heat.

Step 4

Add the minced garlic and shallots to the skillet, sautéing until fragrant and golden brown, about 2 minutes.

Step 5

Add the lean ground chicken to the skillet, breaking it up with a spatula, and cook until no longer pink, approximately 4-5 minutes.

Step 6

Stir in the fish sauce, low-sodium soy sauce, and chili paste into the chicken mixture. Cook for another minute until the meat is well-coated with the sauce.

Step 7

Add the bean sprouts and fresh spinach leaves, stirring gently to combine. Cook until the vegetables are just tender, about 2-3 minutes.

Step 8

Toss the cooked Mee Pok noodles into the skillet, mixing well to combine all ingredients.

Step 9

Season with white pepper, adjusting to taste if necessary.

Step 10

Plate the Mee Pok and garnish with fresh cilantro leaves and a squeeze of lime juice before serving.
