Ingredients

  • 1 head Romaine lettuce
  • 1 medium English cucumber
  • 1 cup Cherry tomatoes
  • 0.5 small Red onion
  • 0.25 cup Kalamata olives
  • 1 15-ounce can Canned chickpeas
  • 0.5 cup Feta cheese, crumbled
  • 2 tablespoons Extra virgin olive oil
  • 3 tablespoons Fresh lemon juice
  • 1 teaspoon Dried oregano
  • 1 medium Garlic clove, minced
  • 0.5 teaspoon Salt
  • 0.25 teaspoon Black pepper

Directions

Step 1

Wash and chop the romaine lettuce into bite-sized pieces and place it in a large salad bowl.

Step 2

Peel the English cucumber, slice it in half lengthwise, remove seeds, and cut into thin half-moons. Add to the bowl.

Halve the cherry tomatoes and add them to the salad bowl.

Thinly slice the red onion and rinse under cold water to mellow the flavor, then add to the bowl.
