Ingredients

  • 4 8-inch whole wheat tortilla
  • 0.5 pound lean ground turkey
  • 0.5 pound lean ground beef
  • 1 medium red onion, finely chopped
  • 3 cloves garlic cloves, minced
  • 1 medium red bell pepper, diced
  • 1 15-ounce can canned black beans, rinsed and drained
  • 2 tablespoons tomato paste
  • 0.25 cup water
  • 1 teaspoon ground cumin
  • 1 teaspoon chili powder
  • 0.5 teaspoon salt
  • 0.25 teaspoon black pepper
  • 0.75 cup low-fat shredded cheddar cheese
  • 0.25 cup fresh cilantro, chopped
  • 1 medium avocado, sliced
  • 0.5 cup salsa

Directions

Step 1

In a large non-stick skillet over medium heat, brown the lean ground turkey and beef together, breaking up any large chunks with a wooden spoon, until cooked through, about 8-10 minutes.

Step 2

Drain any excess fat from the skillet and return to the stovetop.

Step 3

Add the chopped red onion, minced garlic, and diced red bell pepper to the meat mixture. Cook until the vegetables are softened, about 5 minutes.

Step 4

Stir in the black beans, tomato paste, and water, mixing well to combine.

Step 5

Season the mixture with cumin, chili powder, salt, and black pepper.

Step 6

Reduce heat to low and simmer the mixture for another 5 minutes to allow the flavors to meld together.

Step 7

Warm the whole wheat tortillas in a separate skillet or microwave according to the package instructions, just until pliable.

Step 8

To assemble the burritos, lay one tortilla on a flat surface. Place about 1/4 of the meat and vegetable mixture onto the center of the tortilla.

Step 9

Sprinkle with a portion of the low-fat shredded cheddar cheese, and add a few slices of avocado on top.

Step 10

Garnish with fresh cilantro, then carefully fold in the sides of the tortilla and roll it up to form a burrito.

Step 11

Repeat the process with the remaining tortillas and filling.

Step 12

Serve the burritos with salsa on the side.
