Ingredients

  • 4 pieces whole wheat tortilla
  • 200 grams lean ground turkey
  • 200 grams lean ground beef
  • 200 grams black beans, canned, drained and rinsed
  • 1 medium red bell pepper, diced
  • 1 medium onion, diced
  • 2 pieces garlic cloves, minced
  • 2 tablespoons taco seasoning, low sodium
  • 100 grams non-fat Greek yogurt
  • 100 grams low-fat shredded cheese
  • 100 grams lettuce, shredded
  • 4 tablespoons salsa
  • 1 tablespoon olive oil

Directions

Step 1

Heat the olive oil in a large skillet over medium heat.

Step 2

Add the diced onion and red bell pepper to the skillet. Sauté for about 5 minutes, or until the onion is translucent.

Step 3

Add the minced garlic and cook for an additional 1 minute until fragrant.

Step 4

Add the lean ground turkey and lean ground beef to the skillet. Cook until browned, breaking it up with a spoon as it cooks, about 8 minutes.

Step 5

Drain any excess fat from the skillet, and then stir in the low sodium taco seasoning and a splash of water. Simmer for 2-3 minutes until well coated.
