Ingredients

  • 300 grams All-purpose flour
  • 2 Eggs
  • 2 tablespoons Warm water
  • 1 teaspoon Salt
  • 250 grams Ground chicken breast
  • 300 grams Spinach, cooked and finely chopped
  • 1 Onion, finely chopped
  • 2 Garlic cloves, minced
  • 2 tablespoons Parsley, chopped
  • 0.5 teaspoon Black pepper
  • 0.25 teaspoon Nutmeg
  • 1 liter Chicken broth
  • 1 teaspoon Olive oil

Directions

Step 1

In a large bowl, combine the flour and salt. Make a well in the center and add the eggs and warm water.

Step 2

Mix the ingredients with a fork until you have a crumbly dough. Turn it onto a floured surface and knead for about 5 minutes until smooth and elastic. Cover the dough with a damp cloth and let it rest for 20 minutes.

Step 3

In a pan, heat the olive oil over medium heat. Add the chopped onion and garlic, and sauté until translucent.

Step 4

In a large bowl, combine the cooked onion and garlic with ground chicken, spinach, parsley, black pepper, and nutmeg. Mix well to combine.

Step 5

Divide the dough into two portions. Roll out each portion on a floured surface to a thin sheet.

Cut the dough sheets into rectangles, approximately 10cm x 15cm in size.

Place a tablespoon of the chicken and spinach filling onto each rectangle. Fold the dough over the filling and press the edges to seal, creating a pocket.

Step 8

Bring the chicken broth to a simmer in a large pot.

Step 9

Gently add the Maultaschen to the simmering broth and cook for about 10-12 minutes until they float to the surface and are cooked through.

Step 10

Remove from the broth and serve hot, optionally garnished with fresh parsley.
