Ingredients

  • 4 large russet potatoes
  • 0.5 cups low-fat milk
  • 2 cups unsalted chicken broth
  • 2 tablespoons cornstarch
  • 0.25 cups fat-free sour cream
  • 0.5 teaspoons black pepper
  • 1 teaspoon salt
  • 0.5 teaspoons onion powder
  • 0.5 teaspoons garlic powder
  • 1 tablespoon fresh parsley

Directions

Step 1

Peel the potatoes and cut them into 2-inch chunks. Place them in a large pot and cover with cold water. Add a teaspoon of salt to the water.

Step 2

Bring the water to a boil over high heat. Once boiling, reduce the heat to medium-low, cover, and simmer the potatoes until they're very tender, about 15 minutes.

Step 3

While the potatoes are cooking, prepare the low-fat gravy. In a small saucepan, bring the chicken broth to a gentle boil over medium heat.

Step 4

Dissolve the cornstarch in a small amount of water to make a slurry. Stir the slurry into the boiling chicken broth, whisking constantly to avoid lumps.

Step 5

Add onion powder, garlic powder, and pepper to the gravy. Continue to simmer, stirring occasionally, until the gravy thickens, about 5 minutes.

Step 6

Drain the cooked potatoes and return them to the pot. Allow any excess water to evaporate off without covering the pot for 1-2 minutes.

Step 7

Add the low-fat milk and fat-free sour cream to the potatoes. Mash the potatoes with a potato masher or fork until smooth and creamy.

Step 8

Season the mashed potatoes with salt and more pepper to taste. Stir well to combine.

Step 9

Serve the mashed potatoes hot, topped with the gravy. Garnish with freshly chopped parsley for added flavor and color.
