Ingredients

  • 1.5 cups Whole wheat flour
  • 0.5 cups All-purpose flour
  • 1.5 teaspoons Baking powder
  • 1.5 teaspoons Ground cinnamon
  • 0.25 teaspoons Salt
  • 2 large Egg whites
  • 0.75 cups Plain non-fat Greek yogurt
  • 0.5 cups Non-fat milk (or unsweetened almond milk)
  • 0.5 cups Maple syrup
  • 1 teaspoon Vanilla extract
  • 0.25 cups Unsweetened applesauce
  • 3 tablespoons Light brown sugar

Directions

Step 1

Preheat your oven to 375°F (190°C) and line a 12-cup muffin tin with paper liners or lightly spray with non-stick cooking spray.

Step 2

In a large mixing bowl, whisk together the whole wheat flour, all-purpose flour, baking powder, ground cinnamon, and salt. Set aside.

Step 3

In a separate medium mixing bowl, whisk the egg whites until frothy. Add the Greek yogurt, non-fat milk, maple syrup, vanilla extract, unsweetened applesauce, and brown sugar. Mix until well combined.

Step 4

Pour the wet ingredients into the bowl of dry ingredients and gently fold together until just combined. Be careful not to overmix—the batter should be slightly lumpy.

Step 5

Using a spoon or ice cream scoop, divide the batter evenly among the 12 muffin cups, filling each about 2/3 full.

Step 6

Bake in the preheated oven for 18-20 minutes, or until a toothpick inserted into the center of a muffin comes out clean.

Step 7

Remove the muffins from the oven and allow them to cool for 5 minutes in the tin before transferring to a wire rack to cool completely.

Step 8

Serve warm or at room temperature. Store any leftovers in an airtight container at room temperature for up to 3 days, or freeze for longer storage.
