In a large bowl, mix the flour and salt together. Create a well in the center and add the egg and half of the water. Gradually mix these into the flour using your fingers or a fork. Add more water as needed to form a firm dough.
Knead the dough for about 8 minutes, until smooth and elastic. Cover with a clean towel and let it rest for 20 minutes.
In a separate bowl, combine the ground turkey, chopped onion, black pepper, and paprika. Mix well for the filling.
Roll the dough out on a floured surface until it is very thin, about 2mm thickness. Cut the dough into small squares, approximately 4cm x 4cm.
Place a small amount of filling in the center of each square. Fold the corners over the filling to form a bundle and press the edges to seal.
Bring a pot of salted water to a boil. Gently drop the dumplings into the boiling water and cook for 8-10 minutes, or until the dough is cooked through.
While the dumplings are cooking, prepare the sauce by combining the low-fat yogurt with the minced garlic.
Once the dumplings are cooked, drain them and serve immediately, topped with the yogurt garlic sauce and a sprinkle of fresh mint.
