Ingredients

  • 2 large (about 500 grams peeled and pitted) Fresh ripe mangoes
  • 250 ml Water
  • 2 tablespoons Unflavored gelatin powder
  • 2 tablespoons Honey
  • 2 tablespoons Fresh lime juice
  • 250 ml Mango or orange juice
  • 10 leaves (optional for garnish) Mint leaves

Directions

Step 1

Peel and pit the mangoes, then cut the flesh into chunks.

Step 2

Place the mango chunks in a blender or food processor and blend until smooth to create a mango puree.

Step 3

In a small saucepan, combine 250 ml of water with the gelatin powder.

Step 4

Heat the mixture over low heat, stirring continuously, until the gelatin dissolves completely without letting it boil. This should take about 2-3 minutes.

Step 5

Remove the saucepan from the heat and stir in the honey until fully integrated.

Step 6

Add the lime juice, 250 ml of mango or orange juice, and the blended mango puree to the gelatin mixture. Stir until well combined.

Step 7

Pour the mixture into a jelly mold or individual serving dishes.

Step 8

Refrigerate the jelly for at least 4 hours or until set.

Step 9

Once the jelly is set, unmold it if desired and serve chilled.

Step 10

Garnish with mint leaves before serving for an extra touch of freshness.
