Ingredients

  • 1 fresh ripe mango
  • 1 cup large tapioca pearls
  • 2 cups low-fat milk
  • 2 green tea bags
  • 4 cups water
  • 2 tablespoons honey or agave syrup
  • 1 cup ice cubes

Directions

Step 1

Peel and dice the mango, removing the pit. Set aside in a blender.

Step 2

In a medium saucepan, bring 4 cups of water to a boil. Add the tapioca pearls and stir gently. Reduce the heat to medium and cook for 15 minutes, stirring occasionally to prevent sticking.

Step 3

Turn off the heat and let the pearls sit for another 5 minutes until they become translucent. Drain and rinse the tapioca pearls in cold water to remove excess starch. Set them aside in a small bowl.

Step 4

In a small saucepan, bring 2 cups of water to a simmer. Steep the green tea bags in the hot water for 3 minutes, then remove the bags and let the tea cool for a few minutes.

Step 5

Add the cooled tea, low-fat milk, honey or agave syrup, and ice cubes to the blender with the diced mango. Blend until smooth.

Step 6

Divide the cooked tapioca pearls between two large glasses.

Step 7

Pour the mango tea mixture over the pearls, filling each glass.

Step 8
