  • 1 stalk Celery, finely chopped
  • 1 tablespoon Chives, finely chopped
  • 0.25 teaspoon Salt
  • 0.25 teaspoon Black pepper
  • 2 Whole wheat hot dog buns
  • 1 teaspoon Butter, for toasting
  • 2 large Lettuce leaves

Directions

Step 1

Gently steam or boil lobster meat until just cooked, if not already cooked. Allow it to cool, then chop into bite-sized pieces.

Step 2

In a medium bowl, combine the low-fat Greek yogurt and lemon juice. Stir until well mixed.

Step 3

Add in the chopped celery, chives, salt, and black pepper to the yogurt mixture and stir until combined.

Step 4

Fold the lobster meat into the yogurt mixture, ensuring that all the lobster pieces are well coated. Set aside while you prepare the buns.

Heat a skillet over medium heat and add the butter. Split the whole wheat buns open and place them cut side down in the skillet. Toast them for 2-3 minutes until golden brown and slightly crispy.

Step 6

Place a large lettuce leaf inside each toasted bun.
