Ingredients

  • 250 grams whole wheat macaroni
  • 1 tablespoon olive oil
  • 1 medium, finely chopped onion
  • 2 cloves, minced garlic
  • 400 grams canned diced tomatoes
  • 2 tablespoons tomato paste
  • 1 teaspoon dried basil
  • 1 teaspoon dried oregano
  • 0.5 teaspoon salt
  • 0.25 teaspoon black pepper
  • 2 tablespoons, chopped fresh parsley

Directions

Step 1

Bring a large pot of water to a boil. Add a pinch of salt and the whole wheat macaroni. Cook according to package instructions until al dente, then drain and set aside.

Step 2

In a large saucepan, heat the olive oil over medium heat. Add the finely chopped onion and sauté until it starts to become translucent, about 3-4 minutes.

Step 3

Add the minced garlic to the saucepan and sauté for another 1 minute, stirring frequently to prevent burning.

Step 4

Stir in the canned diced tomatoes and tomato paste, mixing well to combine all the ingredients. Allow the mixture to simmer for 5 minutes.

Step 5

Add the dried basil, dried oregano, salt, and black pepper to the sauce. Stir well and let it simmer for another 5 minutes, stirring occasionally.

Step 6

Taste the sauce and adjust seasoning if necessary.

Step 7

Add the cooked macaroni to the tomato sauce, stirring gently to coat the pasta evenly with the sauce.

Step 8

Cook for another 2 minutes to allow the flavors to meld together.

Step 9

Serve the low fat macaroni hot, garnished with freshly chopped parsley.
