  • 2 lbs Beef marrow bones
  • 4 cups Low-sodium chicken broth
  • 1 medium Onion
  • 1 medium Carrot
  • 1 medium Celery stalk
  • 2 Garlic cloves
  • 2 tablespoons Tomato paste
  • 0.5 cup Red wine
  • 1 tablespoon Olive oil
  • 3 sprigs Fresh thyme
  • 1 Bay leaf
  • 1 teaspoon Black peppercorns
  • 1 teaspoon Salt
  • 2 tablespoons Fresh parsley

Directions

Step 1

Preheat your oven to 450°F (230°C).

Step 2

Place the beef marrow bones on a baking sheet and roast in the oven for 20 minutes until they are nicely browned.

Step 3

While the bones are roasting, finely chop the onion, carrot, and celery. Mince the garlic cloves.

Step 4

Once the bones are roasted, transfer them to a large pot. Drain off any excess fat.

Step 5

In the same pot, add the olive oil over medium heat. Add the chopped onion, carrot, celery, and garlic. Cook until the vegetables are softened, about 5-7 minutes.

Stir in the tomato paste and cook for another 2 minutes until it darkens slightly.

Deglaze the pot with red wine, scraping up any bits stuck to the bottom. Let it reduce by half.

Add the roasted bones, chicken broth, thyme sprigs, bay leaf, black peppercorns, and salt to the pot. Bring to a gentle boil, then lower heat to a simmer.

Remove the bones from the pot and discard them. Strain the sauce through a fine-mesh strainer into another pot, discarding the solids.
