Ingredients

  • 6 pieces large eggs
  • 3 tablespoons low-fat plain Greek yogurt
  • 1 teaspoon dijon mustard
  • 3 tablespoons smoked salmon (lox), finely chopped
  • 1 teaspoon fresh dill, finely chopped
  • 1 teaspoon capers, finely chopped
  • 1 teaspoon lemon juice
  • 0.125 teaspoons salt
  • 0.125 teaspoons black pepper
  • 6 pieces fresh dill sprigs (for garnish)

Directions

Step 1

Place the eggs in a medium-sized saucepan and cover them with cold water. Bring the water to a boil over medium-high heat. Once it boils, turn off the heat, cover the pan, and let the eggs sit for 9-10 minutes.

Step 2

While the eggs are cooking, prepare a large bowl of ice water. Once the eggs are finished cooking, use a slotted spoon to transfer them to the ice water to cool for 5 minutes.

Step 3

Peel the eggs carefully and slice them in half lengthwise. Gently remove the yolks and place them in a small mixing bowl. Set the egg white halves aside on a serving platter.
