  • 1 pound lean ground beef (at least 93% lean)

  • 0.5 teaspoon onion powder
  • 0.5 teaspoon garlic powder
  • 2 cups brown rice
  • 4 cups water
  • 1 tablespoon olive oil
  • 2 cups fat-free beef broth
  • 2 tablespoons reduced-sodium soy sauce
  • 1.5 tablespoons cornstarch
  • 2 tablespoons water (for slurry)
  • 4 pieces large eggs
  • 2 tablespoons scallions, sliced

Directions

Step 1

In a medium saucepan, bring 4 cups of water to a boil. Add 2 cups of brown rice, cover, and reduce heat to low. Simmer for about 25-30 minutes or until rice is tender and water is absorbed.

Step 2

While rice is cooking, in a large bowl, combine 1 pound of lean ground beef with 0.5 teaspoon of salt, 0.5 teaspoon of black pepper, 0.5 teaspoon of onion powder, and 0.5 teaspoon of garlic powder. Mix until just combined, being careful not to overwork the meat.

Step 3

Divide the beef mixture into four equal portions and shape them into patties.

Step 4

Heat 1 tablespoon of olive oil in a non-stick skillet over medium heat. Add the beef patties and cook for 3-4 minutes on each side, or until fully cooked through. Transfer to a plate and keep warm.
