Ingredients

  • 500 g Mixed olives (such as Kalamata and green olives)
  • 1 medium Lemon
  • 3 small Garlic cloves
  • 2 sprigs Fresh rosemary
  • 2 sprigs Fresh thyme
  • 2 tablespoons Fresh parsley
  • 0.5 teaspoons Crushed red pepper flakes
  • 1 teaspoon Black peppercorns
  • 2 tablespoons Extra virgin olive oil
  • 2 tablespoons Red wine vinegar

Directions

Step 1

Rinse the olives under cold water to remove excess brine and pat them dry using a paper towel.

Step 2

Zest the lemon using a fine grater, then cut the lemon in half and juice it. Set both the zest and juice aside.

Step 3

Peel and thinly slice the garlic cloves.

Step 4

In a large mixing bowl, combine the olives, lemon zest, lemon juice, and sliced garlic.

Step 5

Strip the rosemary and thyme leaves from the stems, and finely chop the parsley. Add these herbs to the olive mixture.

Step 6

Add the crushed red pepper flakes and black peppercorns to the bowl.

Step 7

Drizzle the extra virgin olive oil and red wine vinegar over the olive mixture and gently toss everything to combine, ensuring the olives are evenly coated with the marinade.

Step 8

Transfer the marinated olives to a sealable glass jar or airtight container.

Step 9

Allow the olives to marinate in the refrigerator for at least 2 hours before serving, or overnight for maximum flavor infusion.

Step 10

Before serving, allow the olives to come to room temperature and give them a good stir. Serve as an appetizer or side.
